These are some of my favorite cookies. Full of peanut-buttery goodness. Easy to make. A crowd pleaser. If I take them somewhere, I will never bring any of home. I get blessed and cursed in turn for making them. Blessed because they are amazing. Cursed because no one can eat just one… or two… or three.
Peanut Butter Cup Cookies

Ingredients
- 1 cup butter (2 sticks) room temperature
- ⅔ cup peanut butter (crunchy or creamy - I like crunchy)
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 2/3 cup flour
- 2 teaspoons soda
- 1 teaspoon salt
- 48 miniature Reese's peanut butter cups, unwrapped
Instructions
- Cream butter, peanut butter, sugar, brown sugar, eggs and vanilla together until smooth. Combine flour, soda and salt and add to butter mixture.
- Form dough into 1-inch balls and place in mini muffin pan (leave in balls; do not press down.)
- Bake at 350 degrees for 10-12 minutes. Just cook until they start to brown, and then take them out. Immediately press a miniature peanut butter cup into the cookie until top is even with the top of the cookie. Let cookies cool in pan for at least 10 minutes before transferring.
We love these things in our house too! But we call the Peanut Butter Cookie Bites.
My kids are severely allergic to peanuts. I know I could substitute the reeces for a rolo or a hershey kiss, but what would I sub the peanut butter for to make them edible for my children?
You could use a standard chocolate chip cookie dough, minus the chocolate chips. You may have to add a little extra flour to make it firm enough to roll into balls, or chill it.

Oh yeah, perfect! I have a bunch of reeses cups from Easter to use up! Peanut blossoms w kisses r my fave cookie so these will be great! Darling first photo by the way!
Yummy! I’ve had these with store bought dough, but I bet this recipe if even better!! I will have to try them soon for our next life group meeting!
